Francesca Sarti calls for a new aesthetic based on food scarcity

Day seven of the Dezeen 15 digital festival features a live interview with Francesca Sarti of food design studio Arabeschi di Latte, who will explain why she thinks we should find beauty in frugality rather than abundance. Watch live from 3pm UK time.


“Most of the environmental issues related to food are due to exaggeration, excess, overproduction and over-consumerism,” she writes in her manifesto called The Beauty of Scarcity.

“I think it is important to build an alternative visual narrative to educate ourselves on the beauty of scarcity,” Sarti writes. “We are too addicted to the beauty of abundance.”

Interdisciplinary designer Francesca Sarti is the founder and creative director of the experimental food design studio Arabeschi di Latte. She established the studio in 2001 to blur the boundaries between design, architecture, art and food.

The Dezeen 15 festival features 15 manifestos presenting ideas that could change the world over the next 15 years. Each contributor will also take part in a live video interview.
