A Quick & Easy Breakfast

While these egg mugs aren’t exactly the same as a classic omelette, they have similar ingredients and flavors.

  • No extra bowls, utensils or even a pan! Cook microwave omelettes in the same mug, using the same fork for scrambling the eggs! How easy is that?
  • Just use an egg or two and some mix-ins and they’re ready to serve!
  • These can be made with whole eggs or egg whites if preferred.

What You’ll Need

EGGS The base for any omelette is eggs. Feel free to use whole eggs, egg whites or even egg substitute if you prefer.

BUTTER Butter adds flavor to an omelette and makes for a great texture. Make sure to oil or spray the dish, too, so that the egg doesn’t stick.

ADD-INS My favorite add in is sharp cheddar cheese but you can add any veggie or cooked meat you’d like.

More Add-Ins

  • Cheese is a great addition, I love cheddar but really any cheese you have on hand is good in this recipe..
  • Add in diced peppers, bacon bits, sliced mushrooms, chopped tomatoes, sliced onions, or even small cubes of ham.
  • If using veggies like peppers or mushrooms, microwave them for about 20-30 seconds to cook them and remove some of the liquid.
  • Microwave mug omelettes are great for using up leftovers!

How to Make Microwave Omelettes

Got eggs? Got a mug? Add a pat of butter, a sprinkle of shredded cheese, and some seasonings.

  1. Crack eggs into a cup and whisk with salt & pepper (per recipe below).
  2. Microwave until the eggs begin to set a little bit.
  3. Stir in cheese & any desired mix-ins. Microwae until set.
  4. Top with a bit more cheese and let the omelette rest until melted.

Tips

  • Cook times will vary based on your microwave and the shape of the mug you choose. Check the omelette a little bit early or add extra time if needed.
  • Whisk the eggs with a fork until they are a pale yellow color, you should see no bits of white or yolk.
  • Add a teaspoon or so of water or milk to make the eggs extra fluffy.
  • Adding the mix-ins once the eggs are partially set helps keep them from sinking to the bottom.
  • Just like with microwave scrambled eggs, do not overcook. the eggs will continue to cook once removed from the microwave.

  • Whisk eggs with salt & pepper.

  • Spray a coffee mug with cooking spray (or rub with oil).

  • Place butter in the bottom of the mug.

  • Add eggs and microwave 45 seconds.

  • Stir in half of the cheese and all of the mix ins. Microwave an additional 35-45 seconds or until the eggs are cooked through.

  • Top with remaining cheese and rest 30 seconds.

Optional mix-ins:
green onions, bell peppers, cooked sausage, cooked bacon, cooked mushrooms, ham, spinach, asparagus, broccoli
