Tips for Melting Chocolate

The best way to do this is in a double boiler, or a makeshift double boiler. All you need is a small pot and a glass bowl that sits on top of the pot.

To Melt Chocolate on the Stove top

  1. Fill a pot with ½-1″ of water in the bottom.
  2. Simmer water and place a heat safe bowl over top, add chocolate.
  3. Reduce the heat to low, and slowly melt and stir the chocolate until smooth.

This is the most foolproof way to melt chocolate, and it’s going to give the best smooth results that won’t stick all over your hand when you eat them!

How to Melt Chocolate in the Microwave

  1. Place in a glass bowl and microwave for 30 seconds on 50% power.
  2. Stir the chocolate and repeat until it begins to melt.
  3. Once it begins to melt reduce to 15-second increments so it doesn’t overheat.

How to Make Chocolate Covered Strawberries

Making these berries is incredibly easy with just 3 simple steps.

  1. Melt: Melt chocolate in a double boiler (per recipe below).
  2. Dip: Remove from heat and dip strawberries in.
  3. Chill: Add toppings if desired and chill in the refrigerator just until set. Store at room temperature for the day.

Excess chocolate can be chilled and saved. It can be remelted

Making these homemade is not only cheaper than store-bought; you also get to pick the ripest, freshest berries to use! Plus nothing says “I love you” more than something homemade just for your sweetheart, customized with their favorite flavors!

Tips for Perfection

Tempered chocolate produces the nicest chocolate covered strawberries with shiny chocolate that doesn’t melt on your fingers when you touch it. Tempering chocolate is not difficult, all you need is a thermometer.

  • Rinse berries under cool water and dab dry well with paper towels before dipping. Drops of water can ruin the chocolate.
  • Use room temperature strawberries.
  • Low slow heat is the best way to melt the chocolate, ensure the bowl is not touching the water.
  • Place dipped berries on a parchment paper or waxed paper lined baking sheet.
  • Make these the same day you plan on serving them.
  • Chocolate covered strawberries are best stored at room temperature for the day.

Variations

There are so many fun ways to dress up these strawberries! You can top them with almost anything you want.

  • Swap the Chocolate: Choose your favorite kind of chocolate. It’s one of only two ingredients, so go all out and get the best chocolate, whether it’s milk, dark or white chocolate. We love Ghirardelli, but any high quality chocolate works well like Callebaut or Guittard
  • Mix things up! Melt two different kinds of chocolate, and use one for dipping and one for drizzling for an extra special presentation.
  • Add toppings: Before your chocolate sets, sprinkle on some fun toppings
    • nuts like chopped peanuts, pecans, or pistachios
    • candy bits, toffee bits, coconut
    • sprinkles, colored sugar

How to Store Chocolate Covered Strawberries

Chocolate Covered Strawberries are best if they’re made the day they are served (but they can last for a couple of days in the fridge too).

Keeping them at room temperature is preferred as they won’t sweat and the chocolate will adhere to the berry better. If you’re keeping them longer than one day, store in the refrigerator.

  • Wash strawberries well and allow to dry completely.

  • Place 1″ of water in a small pot.

  • Break chocolate and place in a glass bowl that fits over the top of the pot without touching the water.

  • Bring the water to a simmer over medium-high heat, then reduce to low and place bowl with chocolate over top. Stir frequently until melted and smooth and the chocolate reaches 88-90°F.

  • Remove from heat (I like to keep the bowl over the pot to keep the chocolate warm) and carefully dip strawberries, holding the stem. Gently shake off excess chocolate and place on a parchment lined baking sheet. Garnish with toppings if using.

  • When all strawberries are coated, place in the refrigerator to set completely before serving.
