MEAT & VEGGIES Punch up those turkey leftovers with a colorful mix of healthy veggies! Grab a bag of Bird’s eye frozen mixed veggies (or include leftover cooked vegetables from your meal or even leftover green bean casserole)!

SOUP Campbell’s Condensed Mushroom Soup makes this quick and easy. Any cream-based soup can work, try cream of celery or cream of broccoli!

SEASONINGS A little onion powder and some poultry seasoning are all that’s needed.

CORNBREAD TOPPING Jiffy corn muffin mix is mixed and spread over top, it all bakes together. We love the addition of cheddar but add in some sliced green onions into the topping mix for a colorful, baked-in garnish! If you’d prefer, you can also use leftover mashed potatoes or leftover mac and cheese as a topper.

How to Make Turkey Casserole

Tasty cornbread & leftover turkey casserole is so easy to put together:

  1. Combine the first 5 ingredients and spread them into a prepared pie plate.
  2. Make the topping and pour over the turkey mixture (per recipe below).
  3. Bake until the cornbread is cooked through.

Let casserole rest before serving!

How to Store Leftovers

Cover the casserole with plastic wrap and keep it in the refrigerator for up to 3 days. Or freeze portions in air-tight containers in the freezer for up to 3 months.

To freeze an entire cooked casserole, bake it in an aluminum foil-lined casserole dish. Once the casserole is cooled completely, fold over the aluminum foil and freeze. Lift the frozen casserole out of the dish and wrap the casserole in aluminum foil and plastic wrap with the date written on the outside.

This turkey casserole is the perfect way to use up leftovers!

  • Preheat the oven to 375°F. Grease a 9″ deep dish pie plate.

  • Combine soup, turkey, thawed vegetables, and seasonings in a bowl. Spread into the prepared pie plate.

  • In a separate bowl, combine Jiffy corn muffin mix, milk, egg, and cheese.

  • Pour the cornbread mixture over the turkey mixture.

  • Bake for 40 minutes or until the cornbread is cooked through.

  • Rest 10 minutes before serving.

To use frozen veggies, thaw before adding to the meat mixture. To thaw quickly place the unopened bag in a bowl of warm water for about 15 minutes, then drain before adding to the casserole.
For an extra fluffy topping,  add an extra egg white to the cornbread mixture before adding to the casserole.
